La Copine began in 2010 on a small food cart parked in a garden in Northern Liberties, Philadelphia. In 2012, Claire & Nikki moved to California and hosted pop-up dinners and catered around Los Angeles in-between their work schedules.
In 2015, the pair moved to the desert and revived the roadside diner, now known as La Copine, and opened for brunch on September 11th, 2015. After two years they acquired a beer & wine license and changed the hours to revolve around the sunsets.
Chef Nikki’s food has been described as California Soul, reimagining Americana dishes with eclectic influences, and a feminine take.
In March 2015, the restaurant temporarily closed due to the pandemic. In May they offered takeout, then catered through the summer/fall, and now offer a weekly meal pickup.
For 2021, the goal is to reopen the restaurant. Claire & Nikki have reinvented themselves time and time again and are excited to do it once more.
