La Copine began in 2010 on a small food cart parked in a garden in Northern Liberties, Philadelphia. In 2012, Claire & Nikki moved to California and hosted pop-up dinners and catered around Los Angeles in-between their work schedules.
In 2015, the pair moved to the desert and revived the roadside diner, now known as La Copine, and opened for brunch on September 11th, 2015. After two years they acquired a beer & wine license and changed the hours to revolve around the sunsets.
Chef Nikki’s food has been described as California Soul, reimagining Americana dishes with eclectic influences, and a feminine take.
